LINA is a traditional fork dough mixer ideal to obtain a perfectly oxygenated dough with stretched fibers without overheating the dough itself during the process. Therefore, the LINA is perfect to produce the traditional Neapolitan pizza and, as a matter of fact, it has been for decades, the chosen dough mixer of the most established and worldwide famous pizza place in Naples L'Antica Pizzeria da Michele.
Lina is also an incredibly robust and reliable dough mixer: all rotating parts have ball bearings and the low processing speed makes the LINA practically indestructible. All parts in contact with the ingredients, such as the bowl, fork, pasta cutter, pasta guard and bowl lid are in stainless steel.
In the standard version, the LINA is supplied with 1 single speed with a three-phase motor, but due to the low absorption of electricity, it can be also supplied with a single-phase motor. In the three-phase version it can be equipped with two speeds with an inverter. The machine is designed and prepared to be mounted on a lifter and roller.
