The blue steel pan allows uniform cooking in small domestic pizza ovens where the cooking floor reaches high temperatures, offering greater protection of the pizza base. This blue iron baking pan gives better results than aluminum/alloy pans, as its superior heat conductivity allows it to warm up in shorter time frames and uniformly over its entire surface, allowing the dough to achieve a perfect alveolation.
